Spring Glow Green Salad

This salad is crunchy, refreshing, and specifically designed to support your liver and digestion during the spring season.

Ingredients:
2 cups Fresh Baby Spinach or Arugula (Rocket)
4-5 Raw Asparagus spears (thinly shaved using a vegetable peeler)
3 Radishes, thinly sliced (great for liver support!)
1/2 Avocado, sliced (healthy fats for skin glow)
1 tbsp Pumpkin Seeds (rich in zinc for skin repair)
A side of Sauerkraut or Kimchi (for that essential dose of probiotics)
Lemon-Ginger Dressing:
2 tbsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
1/2 tsp Freshly grated Ginger (to de-bloat and soothe digestion)
A pinch of Sea Salt and Black Pepper
Instructions:
Prep the greens: Place your spinach or arugula in a bowl.
Shave the asparagus: Using a peeler, shave the raw asparagus into thin ribbons. This makes them easier to digest and gives the salad a gourmet feel.
Assemble: Add the radishes, avocado, and pumpkin seeds.
Whisk the dressing: In a small jar, mix the olive oil, lemon, ginger, salt, and pepper. Shake well.
Serve: Drizzle the dressing over the salad and top it off with a generous spoonful of sauerkraut on the side.
